Lori's Apple Dip

This wonderful fruit dip is especially good on apples, but all types of fruit are yummy.  Lori is a wonderful new friend in my life, and a FABULOUS cook.


Apple Dip

1, 8 oz package cream cheese
1/2 cup brown sugar
1/4 cup powdered sugar
2 tsp. vanilla
Toffee Bits

Cream the cream cheese and sugars.  Add vanilla, fold in toffee bits.  
Serve as a dip with assorted fruit, or just apples.

Spinach Artichoke Dip


Spinach Artichoke Dip

1 chopped onion
olive oil
1 8oz. package cream cheese
1 cup sour cream
½ cup shredded parmesan cheese
1 cup shredded jack cheese
garlic to taste
salt and pepper to taste
1 package frozen chopped spinach, thawed and drained
1 can artichoke hearts, chopped
4-5 drops Tabasco, more or less to taste

Cook onion in olive oil until tender. Add cheeses, salt, pepper and garlic and stir until smooth. Stir in sour cream. Add spinach and artichokes. Add Tabasco to taste. Serve warm.

Homemade Pizza and Sauce



   Homemade Pizza is a favorite at our house.  Everyone makes his/her own pizza, just the size wanted with just the toppings wanted.  Even the grandchildren make their own.  This recipe makes enough for an evening with a crowd. Be sure to pre-heat your oven to as hot as it can get.  Ours is usually set to 550°.  Each pizza takes about  10 - 15 minutes.

   Oh, and our REAL secret are the tiles we keep in the oven.  They are terra-cotta quarry tiles.  {We bought them at HomeDepot many years ago. We recently sought out more, but had a hard time finding them.  We ended up at a tile store that was willing to order them for us.}  We use a pizza paddle and slide the uncooked pizza onto the pre-heated tiles and then use the same paddle to slide the cooked pizzas from the oven too.

Authentic Pizza Dough

2 T. yeast
1 t. sugar
4 cups warm water
4 cups flour

Beat until soupy. Let stand 20 minutes until foamy.

Add to above:

¼ cup olive oil
4 t. salt
8 – 10 cups flour

Mix to stiff dough. Let rest 10 – 15 min.  Makes 5-6 large pizzas, or 15 - 20 small ones.

Remember to use corn meal under the dough to roll the dough out. This keeps it moveable and adds great texture and flavor to your finished pizza.


Pizza Sauce

6, 8oz cans tomato sauce or tomato puree
½ t. pepper
1 t. sugar
2 t. salt
1 t. garlic powder
2 t. onion powder
1 t. sweet basil
1 ½ t. oregano

Simmer one or more hours.  A crock-pot works best.



Use your favorite toppings and cheese. 

Your oven needs to be as hot as it can be, 500 or more degrees.

Michael's Chocolate Syrup



My grandson, Michael, is allergic to milk.  He LOVES chocolate soymilk, but likes to make his own.  This nifty little recipe is easy to make and keep on hand.  We store it in a "re-used" creamer bottle with a flip-top lid.

         

2/3 cup unsweetened cocoa
1 2/3 cups white sugar
1 1/4 cups water

1 teaspoon vanilla extract

Bring first 3 ingredients to a boil in a small saucepan and boil for 1 minute while stirring. Remove from heat and stir in vanilla.

Use to make chocolate soy milk {or regular milk}, or in place of chocolate syrup in any recipe. Michael chooses his own amount...  I'd guess about 1 Tablespoon in an 8 oz. glass.

Corn Cakes


The first time I had corn cakes similar to these was in a spiffy bed and breakfast in Salt Lake City. They were served with spicy black beans on top. They were a wonderful and new experience.  I searched for a recipe and tried out many variations and finally came up with this.  They can be savory or sweet depending on your choice of topping. 

Corn Cakes {makes 6-7 cakes}

Slice and cook 6 slices of bacon with 1/3 cup chopped onion.

Meanwhile, in a medium bowl combine:
        
         1 cup flour
         ¼ cup diced green chili
         1 t. baking powder
         ½ t. salt
         a pinch of cayenne

Stir in:

         2/3 cup milk
         1 egg, slightly beaten
         1 T. oil
         1 can whole kernel corn
         2/3 cup shredded cheese, your choice

Add:  cooked, drained bacon and onion

Cook on 350° griddle by 1/3 cup.

Serve with maple syrup, melted jalapeno jelly, salsa & sour cream, or black beans.  Your choice, savory or sweet!

Cari's Bean Dip


I teach school and let me tell you, school teachers are some of the best cooks alive.  They know many quick and easy recipes that taste like they took all day when, in reality, they took only minutes.  This is one of them.

Cari’s Bean Dip

1 can white corn (drained)
1 can black beans (rinse & drain)
3 green onions, chopped
¼ cup chopped cilantro
6 diced roma tomatoes
2 diced avocados
1 package Good Seasons dry Italian salad dressing mix

Stir together. Refrigerate to allow flavors to blend.
Serve with chips of any kind.

Cranberry Relish

My long-time friend Suzie is a WONDERFUL cook!  {She's even writing a book!}  This recipe is hers.

Cranberry Relish

1 bag fresh cranberries
1 orange, peeled
1 apple, cored
3/4 cup sugar or 1/2 cup sugar substitute (spenda, etc.)

Blend to desired consistency.  We like ours a little coarse.

We eat this as a Thanksgiving side, on sandwiches, and sometimes just plain.
It's good with any meat, fowl, or fish.

It is wonderful frozen in ice cube trays and added to 7-up or ginger ale for a light and delicious punch.
